The Kilchoman Distillery was established on Rockside farm in 2005, it was the first distillery to be built on the island of Islay in over a 124 years. This latest release is a vatting of 80% first fill bourbon barrels and 20% Oloroso sherry butts, filled in 2010 and matured for over 9 years. The nose presents notes of charred peat smoke, lemon curd and sweet spice, leading into cooked banana, sea spray and smoked paprika on the palate. The finish is rich with dried stone fruit, vanilla and soft peat smoke.
