Caol Ila 'North Star' 9 years old 51.8%

Distilled in 2009 at the Caol Ila distillery, this new cask strength bottling comes from independent bottlers North Star. Selected by Iain Croucher from a single ex-refill bourbon hogshead, this whisky was then further matured in a Pedro Ximenez sherry cask. Iain's characterful tasting notes describe an aroma that few would know, but could easily relate to - a humidor in an old smoking room of a hotel (specifically the Malmaison in Glasgow in the 1990's!). The palate is sweet, sooty and ashy, moving to a note of burnt orange slices in the finish. Available in New Zealand exclusively at Whisky Galore.
